Pineapple Flavoured Scrambled Eggs and Yam with Zobo 

Yes… You read right. I made scrambled eggs with pineapple, and the taste was so heavenly. When I finished eating I just staring at my plate thinking why I didn’t do it sooner. The decision to add pineapple to the egg was spontaneous. I was thinking of a way to jazz up my food and bam!

Ingredients Used Pineapple Flavoured Scrambled Eggs

Diced pineapple and onions

  • Tomatoes
  • Onions
  • Scotch bonnet peppers
  • Pineapple
  • Curry
  • Crayfish
  • Salt
  • Two Eggs

Zobo (Hibiscus Tea)

  • Dried hibiscus flowers
  • Pineapple peel
  • Pineapple
  • Ginger
  • Sugar

*For the scrambled eggs and zobo, I used just one big pineapple.

Preparation

Eggs – I washed and diced the tomatoes, onions, bell peppers and pineapple poured in already heating groundnut oil. I stir-fried for 5 minutes added crayfish, curry and salt. I whisked the eggs and added it. I stirred for a while to prevent burning (adding more oil prevents that but I wanted little oil). I left it to simmer for about 3 minutes and voila! Yam Sliced the yam into different shapes, washed, added salt and boiled with water.

Zobo (Hibiscus Tea) – Washed the dried hibiscus flowers (zobo) and pineapple peels, started boiling them with three glasses of water. Then I added some pineapple (the fruit itself), a little bulb of ginger and sugar. I boiled it for about 30 minutes. The ginger flavour didn’t turn out as expected, I could barely notice it. Probably it is because this is my first time or that I love ginger. However, when making the next time, I will definitely add more.
