Avocado Salsa, Peppered Gizzard and Brown Rice

This is a healthy and fun recipe, with focus on the avocado salsa and peppered gizzard, since you only have to boil the brown rice with just water. The great thing about this avocado salsa is you can pair with almost any food of choice. From rice to corn to yam.

Avocado salsa mixed with boiled corn and pineapple

Avocado Salsa


  • Ripe avocados
  • Yellow scotch bonnet pepper
  • Carrot
  • Cinnamon
  • Lime
  • Coconut oil


Cut and mash the avocados, sprinkle lime juice and cinnamon, add little coconut oil and continue to mix. Slice the yellow scotch bonnet peppers and shred the carrots, then add both. Mix until the salsa has a uniform taste.

Peppered Gizzard


  • Gizzard
  • Scotch bonnet peppers
  • Cayenne pepper
  • Onions
  • Ginger
  • Salt, thyme, curry powder to season.


Season the gizzards, add little water and boil on low heat for one hour. You will need to continuously add water.

Dice the onions, cayenne and scotch bonnet peppers. Fry on low heat for five minutes, then add the boiled gizzards and stir fry for an additional three minutes.

Served with apple, pineapple, and banana smoothie.
